Which log shows an event or events when PBX P560 had a problem and its functionality stopped?
For example, at least one time per month, I need to reboot PBX because it had problems with calls, and I want to find the reason.
The firmware is 37.6.0.46

You need a SIP debug log.

You can also follow this guide for P series.
The other thing I do often is when you know the issue occurs, start a packet capture (leave IP and port blank, leave ethernet as default), and start. Make 2 calls out, then 2 calls in. Let each one fail (you have about 4-5 minutes, so it's easy to do it in that time frame). Then when all terminated, press stop. Download and it will let you know the SIP response code (if any). You can see the graph in the URL above.
Sometimes it is not the PBX. For example, if you can make outgoing calls but not incoming calls, your router may be closing ports. It sounds like there is a threshold that is occasionally going over the limit. A configuration is static, so theoretically if it works once, with the same config it should always work.
At least your firmware is up to date. That's always a good start.
