I want to record all calls, but calls made to cell phone who are configured as a simultaneous ring do not get recorded. Am I missing something?

The first questions are, what system and firmware?

Do you mean "mobility extension" when you say "cell phone whar are configured as simultaneous ring"?
Or do you mean the default destination so that when the ring group call is not answered or busy, the call is diverted to the destination which may have mobility or a simple call forward?

I currently admin a Yeastar S20, firmware 30.8.0.14
The cell phone is set in extension´s mobile number, and ring simultaneusly is active in the mobility extension feature.

There is no softphone installed on the device, mobility extension is active on the s20 and cell phone got called thru the SIP trunk

I tested your scenario and you are correct, there is no recording.
I am uncertain if the is a bug or by design. On the one-hand I can rationalize a reason why it may not be a bug"
1. When the call came in, it was sent to a ring group that consisted of a group of extensions. One or more has the mobility aspect enabled which then attempted to ring the extension(s) and the cell(s) at the same time. Once the call was forwarded and accepted by the cell, technically, it was no longer an extension that took the call; hence no recording. Think of it in terms that the system took the call control away from the extension when the cell answered so the call was really a trunk to cell call at this point as there was nothing the extension could do to influence the call, the call was completely out of the extension's path - no ability to hang-up, transfer, voice mail, etc..
I assume you could enable recording on the trunks, but then all external calls would be recorded. I will not address the legal requirements of call recordings as I assume you know them for your locale.
The only thing I can suggest is to submit a ticket or feature request at this time as it does indeed seem to not be currently supported.
