The spec sheet shows a RJ21 connection is available on the TA1610
Yeah, but originally it says 16 FXO port on front, but RJ21 is 50 pin or 25 pairs. So which one is it?

I mean is it restricted to only 16 port (equivalent of RJ21 16 pairs = 32 pins)?
Both.
The device is a 16 port FXO gateway and has two sets of connections. Depending on the need, you can use the RJ11 ports on the front or the RJ21 on the back. While the amphenol connector will support more than the device itself, it will only be wired for the first 16 extensions.
The RJ21 is a connection standard within the industry for use when the density of connections lends itself to the use of a single connector rather than a bunch of pairs terminated into RJ11 or creating new connectors for various sized installs. There is no requirement that all pins/pairs be used as the number of lines in use at any given location may not always equal the connector's capacity. These are usually seen coming off of 66 blocks.
So, two of them would be perfect to cover my needs (24 analog lines). Thanks! )

66 blocks typically support 24 pairs when fully loaded. These will be carried in one Amphenol RJ21 connector. As the 1610 only supports 16 pairs, it may mean that you will need to consider your options when dealing with the last 8 pairs -
1. Find and use a 24 port gateway
2. Breakout the last 8 pair from the 66 block and -
a) moving to another block with a RJ21 where the 1st are open for punch down
b) using RJ11 on pigtails to plug-in to the TA
Two 1610 devices, two RJ21 connectors - first for 16 pairs, second for 8 pairs. Unfortunately, Yeastar doesn't have more than 16 FXO gateway available. One vendor for all of ip-telephony system elements. For reliability and system stability.
